Step 3: You have your choice between our Beef/Lamb and Pork Options.

BEEF TENDERLOIN EN CROUTÉ

Choice roasted tenderloin of beef with fresh Cremini mushrooms, chives, seasoned breadcrumbs and Madeira wine wrapped in puff pastry and baked to perfection.

FILET MIGNON
Choice cut of beef tenderloin lightly seasoned and grilled over an open flame.

GRILLED TENDERLOIN MEDALLIONS WITH COGNAC
Choice beef tenderloin hand-rubbed with coarsely ground peppercorns and garlic and grilled, flambéed and topped with Dijon mustard cream sauce.

BEEF TENDERLOIN DIJON
Choice beef tenderloin hand rubbed with coarsely ground black pepper, salt and Dijon mustard and roasted to perfection.

CHOICE BEEF TENDERLOIN
Choice of roasted or grilled select seasoned beef tenderloin.

CHOICE GRILLED STEAKS
Choice of New York strip of rib eye steaks seasoned and grilled over an open flame.

ROASTED PRIME RIB OF BEEF
Choice cut prime rib of beef served with béarnaise sauce.

TOP ROUND OF BEEF
Prime top round of beef hand rubbed with coarsely ground black pepper and garlic, roasted to perfection. Served with horseradish and Dijon mustard cream.

GRILLED FLANK STEAK SANGRIA
Choice flank steaks marinated in a fruity wine sauce, hand rubbed with coarsely ground black pepper, salt and thyme. Grilled over an open flame.

SZECHWAN BEEF STIR-FRY
Boneless beef sirloin steak strips stir-fried with traditional oriental vegetables in a spicy Szechwan sauce.

GRILLED BEEF TENDERLOIN KEBABS
Tenderloin of beef chunks, mushrooms, onions and bell peppers, skewered and grilled over an open flame.

GRILLED BEEF KABOB
Top round of beef chunks, mushrooms, onions and bell peppers, skewered and grilled over an open flame.

SLICED BEEF AU JUS
Choice top round of beef seasoned and roasted to perfection.

STIR FRIED ORIENTAL BEEF
Sliced top round of beef marinated in soy sauce and stir fried with oriental spice essence.

BEEF FAJITAS
Boneless beef round steak cut to strips and sautéed in a traditional South Texas marinade and served with lettuce, tomato, onions and guacamole with soft tortillas and lettuce.

SWISS STEAK
Choice cube steak dipped in egg and rolled in flour and spices. Deep fried in pure vegetable oil.

BEEF STROGANOFF
Beef strips in a white sauce with sliced onions and mushrooms served over your choice of pasta noodles.
